Green Spaghetti

Wanted to share this recipe for the runners because of various reasons.  Spaghetti is a great food to eat the night before a big race or a hard workout.  This recipe is simple and fast which I like, its also pretty tasty in my opinion.  Here's the run down:
Buy some Poblano peppers I use about 4
Get some sour cream
Any type of Spaghetti will do, I like to use the traders joe's brand its pretty cheap and tasty
Have some olive oil
So you boil water in a pot, and while your waiting for the water to boil you put the poblano peppers on top of the stove for a couple of minutes.  You take the seeds out of the poblano pepper and put the peppers in the blender.  I also like to take some of the burnt off the pepper with the knife.  After that you put sour cream and some olive oil and mix it all up in the blender.  This creates a pesto looking green sauce.  You can also add some salt and pepper, but I like to wait until I serve it to add them.  You add the spaghetti to the boiling water and drain it.  Then you mix the spaghetti with the green sauce in the pot and be sure to add some olive oil so the spaghetti wont stick.  This whole process should take you 15-20 minutes and it should feed 3-4 people depending on how much you make.  I like to toast some bread and eat it with some bread, it's a good veterinarian meal, light on your stomach, and it's a pre-race favorite of mine.  I'll include some pictures with this entry so you can see what I'm talking about.  The meal is relatively cheap-pasta about 1 dollar, sour cream 2 dollar, poblano peppers 2 dollars, and the olive oil.  It's also great to take to work for a good lunch.
